寿司=sushi 寿司是一种带菜码的米饭团,是一种最具有代表性的日本民族料理,它是米饭、鱼、醋巧妙组合的结晶。Sushi is a kind of rice topped with vegetables。It is a spetacular combination of various ingredients including rice,fish and vinegar and is the most representative Japanese cuisine。两千多年前,寿司曾经用中国的汉字"鮨"、"鲊"表示过,但当时这两个汉字的意思有所不同。" Over 2,000 years ago,sushi once was written using Chinese characters "鮨" and "鲊"。But at that time the meanings of the two characters actually varied。"鮨"最初出自公元前5至公元前3世纪的字典里,指腌咸的鱼贝、肉类食品,尤其指腌咸的鱼;"鮨" initially came from Yi dictionary around the 5th to 3rd century BC,referring to salted fish,shellfish and meat foods,particularly salted fish; "鲊"最早出现在两千多年前字典里,指把米饭、鱼、盐放在一起,经腌制发酵后,产生一种酸味的鱼,是(熟)寿司的意思。"鲊"first appeared in the dictionary of Shuowenjiezi ("Explaining Simple and Analyzing Compound Characters") more than 2,000 years ago。It refers to the process of putting rice,fish and salt together and letting the pickles ferment to create a sour favoured fish。It actully stand for what we count as cooked sushi today。
